Microwave Bread and Butter Pickles
Linda Nagata submitted this recipe to the 2012 Parkview cookbook. I have made it at least four times! Everything is tasty by itself, but the pickled onions are super tasty in sandwiches and burgers!
3 C. cucumber, sliced
1 med. onion, sliced
½ green pepper, sliced
1 tsp. salt
½ C. vinegar
⅔ C. sugar
¼ tsp. celery seed
¼ tsp. turmeric
¼ tsp. mustard seed
Microwave all the ingredients, covered for 5 minutes at 9 power. Let the mixture set for 7 minutes. Bottle and refrigerate. Makes 1 quart.
