1 cup Mochiko (sweet rice flour). I use Koda Farms. (This measurement cup is for dry ingredients such as flour and sugar. If you are using a glass cup to measure liquids, the equivalent amount is up to the line of 200 ml.)
1 cup water
½ cup sugar
Ingredients B
2-3 tbsp. corn starch or potato starch (katakuriko)
1 tsp. any oil (Pam works, too)
Equipment
small flat square glass pan (5″ x 5″)
cutting board
sharp knife (Ceramic knife works very well. Wet it when you cut in.)
microwave oven
Directions
Spray Pam or rub any oil onto the bottom of the glass pan.
Spread cornstarch on the cutting board.
Mix Ingredients A into a large ball and pour into the pan.
Heat the pan in a microwave oven on high about 4 minutes. (Check the middle. If the middle part is uncooked, cook a little longer.)
Hold the pan upside down and put the steamed mochi onto the cutting board.
Cut into 16 bite sized squares.
Roll pieces in the corn starch to coat.
Pink or Green Mochi
Add 1 drop of red or green food coloring when you mix Ingredients A. Be careful not to make the color too strong.
