Asian Style Roasted Sea Bass
Ingredients
- 1 lb thick-cut sea bass fillet (available at Costco in Elk Grove)
For Marinade:
- 1 Tbsp sesame oil
- 1 Tbsp chili garlic paste (I used Huy Fong Foods)
- 2 Tbsp honey
- 1 Tbsp dark soy sauce or tamari
- 1 tsp chopped garlic
- ½ tsp minced or ground ginger
- ½ Tbsp fresh lime juice
Directions
- Mix marinade ingredients and increase chili paste, garlic or ginger to taste.
- Coat all sides of sea bass in marinade for about 30 minutes at room temperature.
- Preheat the oven to 400 degrees F.
- Place sea bass with the skin down on a parchment paper lined baking sheet.
- Coat top of sea bass with the chili paste from the marinade but reserve remaining liquid.
- Place the sheet on the middle rack in the oven.
- Set a timer for 10 minutes.
- Heat remaining marinade liquid to a light boil/simmer and use it to baste/pat on sea bass at 10 minute mark.
- Set the timer for another 10 minutes. Total cooking time is about 20 minutes. May need to reduce time for thinner fillets. Done when sea bass flakes begin to separate and look white, or internal temperature is about 125 degrees F.
- Serves two fish lovers.
