I couldn’t find my mom’s recipe (best banana bread I’ve ever had), but this one is amazingly close to what I remember, except Mom did NOT use cinnamon!
Ingredients
- 1 cup butter or margarine
- 2 cups sugar
- 6-7 ripe bananas, mashed
- 4 eggs, well beaten
- 2½ cups flour
- 1 tsp. salt
- 2 tsp. baking soda
- 2 tsp. cinnamon (optional. In fact, don’t use it!)
Directions
- Cream margarine with sugar, bananas, and eggs.
- Sift flour, salt, baking soda, and cinnamon (optional) to remove lumps.
- Blend the two into a creamed mixture, but do not over mix.
- Turn batter into 3 greased half pound loaf tins or one 9 by 13 inch cake pan.
- Bake at 350 degrees for 45-50 minutes.
