Banana Bread

I couldn’t find my mom’s recipe (best banana bread I’ve ever had), but this one is amazingly close to what I remember, except Mom did NOT use cinnamon!

Ingredients
  • 1 cup butter or margarine
  • 2 cups sugar
  • 6-7 ripe bananas, mashed
  • 4 eggs, well beaten
  • 2½ cups flour
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 2 tsp. cinnamon (optional. In fact, don’t use it!)
Directions
  1. Cream margarine with sugar, bananas, and eggs.
  2. Sift flour, salt, baking soda, and cinnamon (optional) to remove lumps.
  3. Blend the two into a creamed mixture, but do not over mix.
  4. Turn batter into 3 greased half pound loaf tins or one 9 by 13 inch cake pan.
  5. Bake at 350 degrees for 45-50 minutes.
